Any vegetable tastes better with cheese. This is a really goo way to prepare cauliflower in a casserole. A great side dish for any meal.
1 large head of cauliflower cut into florets
2 tablespooons flour
1 cup whole milk
1 egg, beaten
1 teaspoon of quality salt
1/2 teaspoon fresh ground pepper
2 cups shredded mozzarella cheese
1/2 cup white cheddar cheese
1/4 cup grated Parmesan
1-2 tablespoon freshly chopped parsley, can use dried, but only 1 tablespoon
Preheat oven to 350 degrees.
Brind a medium pot of water to boil and steam caulifloweer until almost tender, drain and set aside.
In a medium mixing bowl, whisk the milk into the flour, then add beaten egg, salt, pepper and one cup of mozzarella cheese.
Add the cooked cauliflower and stir to coat with the mixture.
Pour into a 7×11 casserole dish. Sprinkle remaining cheese on top.
Bake on top oven rack for 25 minutes, or until top is browned and the cauliflower is tender.
Sprinkle with Parmesan and parsley!! Yummy!
