Broccoli Salad with Apples
Who doesn’t love fresh fall apples? With the rest of the broccoli from the garden here is a tried and true recipe that has been a hit where ever you serve this. Use your favorite apple, I like Honeycrisp in this recipe as they have the juciness and crunch I love in a salad.
2 bunches of broccoli with florets broke into bite size pieces
1 large apple cut into chunks (use your favorite) Add more apple if you like
1 small red onion, chopped fine
2 cups shredded cheddar cheese, try a mix of white and yellow or instead of shredded cut into thin sticks or chunks
3 slices bacon, cooked and crumbled
1 teaspoon red wine vinegar
1 tablespoon agave nectar or honey
1/2 lemon squeezed
zest of 1/2 lemon
3/4 cup or more of mayonnaise
salt and pepper to taste
In a large bowl, whisk the mayo, red wine vinegar, agave, lemon juice and zest until well blended. Add the cheese, broccoli, apple and onion. Mix well, then add salt and pepper to taste along with sweetness. Adjust as necessary. Mix in crumbled bacon Serve well chilled. Store in airtight container.
