Baked Parmesan Tomatoes


Are you looking for a way to use up all those tomatoes?

Try this super simple recipe!

Baked Parmesan Tomatoes

4 tomatoes, halved horizontally

1/4 cup freshly grated Parmesan cheese

1 teaspoon chopped fresh oregano and fresh basil

1/4 teaspoon salt

Freshly ground pepper, to taste

4 teaspoons extra-virgin olive oil

Instructions:

  1. Preheat oven to 450° F. or get grill to medium
  2. Place tomatoes cut-side up on a baking sheet. If grilling, place on tin foil or foil pan, then continue
  3. Top with Parmesan, oregano, basil, salt and pepper. Drizzle with oil and bake until the tomatoes are tender, about 15 minutes.
  4. Eat as is or put in a sandwich with your favorite bread and some sliced turkey or chicken.
