Pasta, Rice, Orzo Garden Salad

This is the simplest salad to make for summer. Take leftover rice, orzo and any other pasta of your choice and just add any of the following:

Freshly sugar peas cut the short way into strips

torn up arugula or any other salad green

Sliced olives of your choice

Mushrooms

Sliced Swiss chard

Fresh or canned mushrooms

Fresh shelled peas

(any other garden produce that you can slice or dice!

Fresh parsley or cilantro

garlic powder or a bit of fresh minced garlic

Squeeze of a lemon or lime

Add enough olive oil to coat the salad evenly. Add fresh cracked pepper and salt. Add a dried herb

seasoning, any mix that you enjoy. I have used Italian, Spinach and a garlic one.

Tah dah! You have a salad to eat!
