Layered Rhubarb Dessert

This is very similar to the standard chocolate pudding dessert except you add rhubarb!

Everyone who tastes it, really likes the combination of the cream cheese and rhubarb. To make this really high, double the amounts. but look out, you will not be able to cover it as it is so high!

1/2cup  unbleached white flour, 1/2 cup wheat flour or wheat pastry flour
1/2 c. chopped nuts (your choice any will do)
1/2 c. melted butter
Combine all ingredients and pat into 9×13 pan. Bake at 350 degrees for 15 minutes; let cool.
1 (8 oz.) pkg. cream cheese, softened
1 c. powdered sugar
1 c. freshly whipped cream, sweetened and with vanilla– use 1/2 pint
Beat cream cheese and powdered sugar together. Blend in 1 cup cream. Spread over chilled crust; cool. Let chill.
6-6  c. rhubarb, cut up (fresh or frozen)
1 1/2 c. sugar
2 tbsp. minute tapioca
1/4 tsp. nutmeg and 1 teaspoon cinnamon
Bring all ingredients to a boil and cook 5 minutes; cool. Spread over second layer

Take on pint of heavy whipping cream whip till soft peaks add some powdered sugar and vanilla. You will use it all. Swirl it around if you like as in the photo.

Chopped nuts (optional)

Sprinkle with chopped nuts if desired.
