Hummus with Parsley Sauce


Hummus is one of my favorite go to snacks. I like it with vegetables, chips, crackers and spread for a sandwich. Here is one that has parsley swirled in.

Hummus with Parsley Sauce

1 can chickpeas

1 lemon juiced

1 to 1 1/2 teaspoon salt

1/3 cup Tahini paste (usually found in the health food section)

Parsley Sauce (mix separately)

1/4 cup Italian leaf  parsley
1  jalapeño, destemmed and seeded
1 large clove garlic
1/4 teaspoon
2/3 cup  extra virgin olive oi

Put all ingredients for the hummus sauce in a food processor and pulse until fine or consistency you like. Put in a bowl.

Rinse out processor bowl and add all the sauce mix except the olive oil. Once you have it blended well, slowly drizzle olive oil in until well mixed.

Now you can add to your hummus, either by simply making a well in the hummus and add the sauce or drizzle in and gently fold so green streaks showAdjust the seasoning if you like.

Serve with pita chips, crackers, flatbread or even vegetables.
