I have seen many recipes for this soup, but came up with one that combines a few together!
Kale this time of year is wonderful and luckily I grow my own.
Kale Sausage Soup
1 pound Italian Sausage, cooked and drained
1/2 pound bacon, your choice, I like turkey but also try beef or pork (you decide)
3 large potatoes, cut into chunks ( I used Yukon and Red potatoes)
1 large red onion, chopped
3 garlic cloves, minced
3 cups kale, ribs taken out and sliced into ribbons
3 8 ounces cans or equivalent box chicken broth, preferably organic
1 can garbanzo beans
1 can white beans
1 quart and 1 pint water
1 1/2 cup heavy whipping cream
Brown sausage and bacon in the stock pot until golden brown. Take out and put on plate with paper towels to drain. Wipe stock pot with paper towel to get excess fat out.
Put onion, garlic saute with some of the left over fat into the same pot, add potatoes in pot and cook until potatoes partially cooked.
Add chicken broth and water to stock pot, cook until potatoes are tender.
Add sausage and bacon, beans add a bit of salt and fresh cracked pepper to taste. Simmer for about 8 minutes.
Turn heat to low and add kale and cream. Let kale get slightly softened. Serve.
*You can also use white butter beans or white kidney beans and bit of cayenne if you like some spice!
