Shrimp Roll-Ups


Being it is hot and no one wants to cook on a stove, try this easy recipe with cooked shrimp. You can purchase cooked in a deli or buy frozen and thaw.

Shrimp Roll-Ups

Ingredients:

1 avocado, halved with fruit removed

4 ounces of cream cheese, softened

1/4 cup of  ketchup or mild chili sauce

1 tablespoon of horseradish cream

1 teaspoon lemon zest

1/2 teaspoon chili powder

6 Ten-inch tortilas

3 cups of spinach leaves, chopped

2/3 cup sliced almonds

10 ounces of cooked, deveined, peeled shrimp and chopped finely

Stir in ketchup, horseradish, lemon zest, chili powder.

On a tortilla spread 1/4 cup of avocado mixture, leaving a border around an inch on all sides. Put a layer of spinach down. Sprinkle with some almonds, then some shrimp. Roll up and put on a plate in the fridge for at least two hours. Then slice and put a toothpick in to serve. Eat the ends as those slice don’t look so great! Arrange on a serving platter and serve.
