When one has a lot of watermelon you can make fabulous salads with it!
Try any of these recipes, all are good!
1 – small to medium watermelon carved with a baller
1 – package of orzo ( I actually only used about 1/2 or so of the package )
2-3 stalks of fresh mint & basil
1 – juice of a fresh lemon
1/2 cup of high quality feta cheese
2 – tablespoons of olive oil
salt and pepper to taste
Bring a large saucepan of salted water to a boil. Stir in orzo and return to a boil; cook until done, about 8 to 10 minutes. Drain orzo and allow to drain completely. Once orzo is cool, toss with remaining ingredients in a medium serving bowl.
