Kale Bruschetta

Kale is growing like crazy now. Try this simple recipe to compliment your dinner.

Make it on the grill, so easy!


bunch of kale

a good crusty bread, yet moist inside

1 garlic clove, minced

salt and Extra virgin olive oil

Shaved Parmesan cheese or toasted pine nuts

a few sprinkles of hot pepper flakes

Clean kale by removing tough stems and washing. Add to a small pot of boiling, salted water, cook until just tender. Drain, add some coarse salt, red pepper flakes and minced garlic. Add olive oil until well combined. Chop finely. Add more oil if necessary

Cut bread into slices, brush olive oil on one side. Grill until golden. Remove from grill, Put olive oil on other uncooked  side and spread cooked kale on the cooked side, return to grill until golden. Put shaved cheese slices and/or pine nuts on and enjoy!


Warm up a can of white beans such as cannellini, add to the kale mixture. Then prepare the bread the same way, I really like this combo! You can smash the beans a bit if you do not like them all whole.
