With all the cabbage ready to pick I always rely on easy recipes that I can make quickly after a days work. This one is fast and easy and tastes good.
1 medium to large head of cabbage
1 large carrot shredded
1 green pepper chopped
I also add 1 red pepper chopped or any combination of peppers in the garden (chocolate, yellow or bananas)
1 cup sugar
1 cup apple cider vinegar
1 teaspoon celery seed
1 teaspoon dry mustard
1/2 cup water
Toss vegetables in a large bowl. Sprinkle with salt. Let stand one hour if possible. Combine vinegar, water, sugar, mustard, celery seed in a pan and bring to a boil. Stir constantly for 2 minutes. Let cool- pour over vegetables, if there is not enough liquid, depending on the size of the cabbage, just make another batch of the vinegar mixture. Mix and pack into air tight freezer containers.
To serve, let the slaw thaw in refrigerator overnight. The slaw will remain crisp.
