Corn and white bean salad


Recipe: Corn and white bean salad

Photo was taken before parsley or basil was added
  • 1 tablespoon red wine vinegar or freshly squeezed lemon juice
  • 1/4 cup olive oil
  • Salt and freshly ground black pepper
  • 1 tablespoon minced garlic
  • 1 cup chopped tomatoes
  • 2 cups cooked corn kernels
  • 4 cups cooked or canned white beans, drained and rinsed
  • 1/4 cup chopped fresh basil leaves
  • 1/4 cup parsley leaves, if you are not a basil fan
  • 1 chopped red pepper and/or 1 yellow pepper

Whisk together the vinegar, olive oil, and a sprinkle of salt and pepper in a large bowl. Add the garlic, tomatoes, corn and beans, red/yellow pepper and gently stir until everything it coated with the dressing. Taste, adjust the seasoning if necessary, stir in the basil or parsley and serve.
