Quinoa with Black Beans

1 teaspoon canola oil

1 red onion chopped

3 cloves garlic, peeled and chopped

3/4 cup cooked quinoa, rinsed

2 teaspoons chicken bouillon mixed with 1  1/2 cups water

1 teaspoon ground cumin

1/8 teaspoon of cayenne pepper, or more if spice lover

salt and pepper to taste

1 cup frozen corn kernels

a few chopped fresh tomatoes

2 cans black beans, rinsed and drained

1/2 cup fresh chopped cilantro

Directions:

Heat oil in a medium saucepan over medium heat. Stir in the onion and garlic, saute for five minutes.

Rinse quinoa with cold water for a few minutes using a fine sieve.

Mix quiona into the saucepan and cover with broth. Season with cumin, cayenne pepper, salt and peper

Bring the mixture to a boil. Cover, reduce heat, simmer 20 minutes.

Stir in frozen corn into saucepan, continue to simmer about five minutes. Mix in the black beans, tomatoes and cilantro.

Makes about 8 servings
